Pat Whittis's Peanut Brittle

Ingredients
1 1/2 tsp soda
tsp water
tsp vanilla
1 1/2 cups sugar
1 cup water
1 cup light corn syrup
3 T butter or margarine
1 pound shelled unsalted peanuts

Direction's
Butter 2 151/2 x 12 inch baking pans keep warm
Combine soda 1 tsp. water & vanilla set aside Combine sugar. 1 cup water & corn syrup in large saucepan.
Cook over med. heat stirring occasionally to 240 degrees
(or until small amount of mixture is drooped into cold water forms a ball which flattens when removed from water)
Stir in butter & peanuts
Cook stirring occasionally until small amout of mixture is dropped into a very cold water
seperates into threads which are hard & brittle
Watch carefully so mixture does not burn
Immediately remove from heat, stir in soda mixture
Pour half the candy mixture onto each warm baking sheetand quickly
spread evenly about 1/4 inch thick Break candy into pieces
 Approx 2 pounds
